both are from an evergreen tree related to the laurel
when harvesting cinnamon verum, the outer bark of the tree is removed and the inner bark is retrieved and dried.
several sheets of bark known as the phloem layer- are stacked and, upon drying, curl to become the familiar cigar-shaped quill.
cinnamon cassia– square pieces of bark are cut from the mature tree. Upon the drying the ends roll up inwardly towards each other in a scroll like manner
cassia is less complex cinnamon but is more pungent.
