Japanese style green tea
Sencha Green tea is made from green tea leaves (camellia Sinensis) that are cultivated in direct sunlight. The leaves of the upper shoots are harvested in the first or second flush- which is the best quality.
Once the leaves are picked that are steamed to prevent oxidation.
The leaves are then rolled and dried, which results in the juices of the leaves being released, which intensifies the taste.
The best temperature for brewing Sencha should be around 70 degrees.
