Besan (chickpea flour)

Produced by de-husking and milling brown (desi) chick peas.  It has a strong nutty flavour.  May be referred to in recipes as “gram flour”.  It is used as a binding or thickening agent in many recipes as well as batters, dumplings, sweets and breads
