- Non- fermented or unfermented tea
- Processing involves withering, heating, rolling and drying
- After picking, the fresh leaves are spread out on bamboo trays and exposed to sunlight or warm air for one or two hours
- Chinese green tea is characterized by pan-firing either in a basket, pan or mechanised rotating drum to halt the oxidiation process and preserve freshness
- The leaves are then rolled into various shapes and then dried
- The rolling helps regulate the release of natural oils and flavour during steeping
